Currently the procedure for our rosette testing requires using a coverslip on our slides.  Does anyone else do this?

We do not use a coverslip. View with microscope using low power. Liquid does not come into contact with objective.

we don not use it either, but I think use it may be easy to watch

Package insert doesn't say anything about using a cover slip - so we don't. I do let the cells settle briefly so they are not moving when I count rosettes.

I always used a cover slip when I needed to put it on a slide rather than just read it in the tube.  The instructions for the kit I am remembering used to include using one.
